Planting seeds for root vegetables

  • You can plant seeds for some root vegetables now. Radishes are fun, fast, and easy to grow. You can have mature radishes in three weeks from planting seed.

    Carrots are harder to germinate. They need light-textured soil to grow straight and smooth.

    Beets are another root vegetable grown from seed by Marin gardeners. You can eat the seedlings (leaves and roots) that you thin from the garden bed.

    All of these root vegetables have phytochemicals that give them their distinctive color. Red radishes have lycopene, carrots have yellow/orange carotenoids, and beets have blue/purple anthocyanins. The phytochemicals act as antioxidants. and promote a healthy eating lifestyle.
